As one of Osaka’s most acclaimed breweries, the Daimon Shuzo (Brewery) leaves a trail of multiple award winning sake in its wake. The brewery has rapidly gained respect and reputation by delivering consistently exceptional sake that is enjoyed by many aficionados across the globe.
This episode of Sakeology’s mini docu-series features none other than brewery president and Toji (Master Brewer), Yastuaka Daimon. As he gives us an intimate view into his world as a sixth-generation heir to the Daimon dynasty, he describes the challenges during his journey to understanding his destiny and how his purpose is now represented in his life’s philosophy.
Yastutaka was the eldest son of six, born into a family with over 200 years of sake brewing experience under their belt. In the traditional Japanese sense, this meant that throughout his childhood he experienced the immense pressure to one day take over the family business - to step into the role that was assigned to him at birth.
As a fearless, young and adventurous soul, Daimon-san often daydreamed of escaping from the life he would inevitably inherit and desired to travel to a distant place where nobody knew who he was. He yearned for the ability to make his own decisions freely and experience life as a human being, not as the next Toji in line to the Daimon throne.
His ambitious adventure to travel to the “end of the world” embarked in 1969 with a 55 day voyage by boat. Having never left the shores of Japan before, Daimon-san decided to travel to the furthest place he could imagine in his mind’s eye. That place was the port city of Marseille, France.
7 long years and 55 countries later, along with a lengthy spiritual journey that included a monkhood in India, Daimon-san finally returned (via land, no less) to Japan, but emboldened with purpose - derived from his newly found worldly experience along the way.
Having been immersed in so many cultures along the way, Daimon-san experienced a life-changing emotional and psychological journey that led him to explore that intangible relationship between his dreams and his destiny. He knew that he now had a purpose, to return to the land of his father and to share his experience through his craft.
It was at this point that he realised that the answers he seeked all along had revolved around his understanding of time and the need for maturation, leading him home to bring his new vision of sake to not only Japan, but the world.
Once he was finally reunited with this family in the 90’s, he threw himself and all of his global insight into evolving the Daimon Brewery to make artisanal sake more accessible to all.
Earning the title of Senior Manager after 6 years, he went on to launch the Sake Export Association which ran parallel to the brewery. He travelled the globe again to advocate Japan Craft Products with the JETRO ( Japan External Trade Organization) as a Kuramoto ( brewery owner) - an educator to help facilitate and drive new talent into the sake industry.
As a man of many talents, it’s unsurprising that Daimon-san’s skills encompass more than just brewing sake. His lifelong passion for jazz music has inspired his creative principles to intertwine with his vision for sake, ensuring that only the finest flavours and aromas are captured and delivered in his process, perfected over generations of Tojis before him.
Today, Daimon-san continues his day to day operations as brewery president and Toji to create multi award-winning sake that truly encapsulates the vibrant and culturally rich spirit of the prefecture.
