Brewed by the humble sized Wakanami brewery, the FY2 Jumai is made from only the highest-grade sake rice grown in the Fukuoka prefecture.
This year brings a surprisingly refreshing change of taste. Wakanami brewery having tweaked the recipe, adding yeast and malic acid delivers a sake that is reminiscent of white wine and can be enjoyed all year round.
This sake is a summery bouquet of aromas, such as grapefruit, melon, pear, and acacia. Despite the wafting florals, it is sharp and dry with beautiful acidity and transparent waves of umami.
The FY2 pairs excellently with freshly shucked oysters with a squeeze of lemon, flounder, blowfish with ponzu, and other ocean delights.
